Pineapple and Cottage Cheese Side Salad
(per serving, although I made two)

Wash and trim the ends off of a leaf of Romaine lettuce.

Fold the leaf in half, add a scoop of cottage cheese, and top with a slice of pineapple. As easy as that, you have your veggie, protein, and fruit!

If you like maraschino cherries, add one on top. It definitely looks more festive this way!

Unless you really have a small appetite, you’ll probably need to serve this as a side salad rather than a meal, but it’s definitely worthy of respect as a healthy part of almost any American-style dinner.
